You know the old saying about weather? If you don’t like it stay awhile, it will change. Well, that is certainly the case here in Virginia Beach. Earlier this week we experienced a few days of magnificent “deck weather”. Today the temps are in the low 40s! Which makes it the perfect day to make soup. Here’s one of my favorite recipes.
4 T butter
1/2 c celery, chopped
1/4 c onion, chopped
1 pt milk
1 (12 oz) can evaporated milk
1 T Worcestershire sauce
1/2 tsp pepper
Dash salt
1 tsp Old Bay seafood seasoning
3 T honey
2 tsp lemon juice
2 tsp sherry
1 lb crab meat
1/4 c cracker crumbs
Saute celery, onion, and butter in heavy saucepan. Add remaining ingredients* and simmer, do not boil. Heat slowly, and then add crab meat and cracker crumbs to thicken soup. Continue to add crumbs until thick enough. *except crab meat and cracker crumbs.

I know what you mean about the weather, here in NY it reached into the 50′s for a couple of days last week, it had me dreaming of more days like that. Today is only in the 40′s.
